Earl grey choux à la crème


Here are some pictures of these earl grey cream puffs I made last week. I love my choux à la crème with custard filling in them, which is why I made earl grey custard but they weren't as stiff as I wanted them to be. So as a substitute filling, I whipped up some heavy cream with sugar and mixed in just enough earl grey custard to keep the stiffness I liked but infused the sophistication from the earl grey tea leaves and froze them whole. I've tried thickening custards with additional ingredients such as corn starch and flour, but I don't necessarily like the consistency those thickeners produce. These cream puffs were a huge hit at work which I'm happy about but I'll be experimenting with thickening custards for a while until I post a recipe!
